
Mexican Cinnamon Cookies

The Mexican version of the polvorones cookies, just as crumbly as the original. In Mexico, it is called: polvorones with cinnamon. They are made for almost any occasion, and even without one, but they are definitely placed on wedding tables. The main feature of this variation is that the warm finished cookies are rolled in a mixture of powdered sugar and cinnamon.
Ingredients
- Butter 10 oz
- Sugar ¼ cup
- Wheat Flour 2 cups
- Corn Starch 1 cup
- Vanilla extract 1 teaspoon
- Cinnamon 1 teaspoon
- Powdered Sugar ½ cup
Step-by-Step Guide
Step 1
Preheat the oven to 160°C (320°F). Grease the baking sheets with butter.
Step 2
In a deep bowl, beat the softened butter with the granulated sugar until fluffy.
Step 3
Sift the flour and cornstarch, and gradually mix them into the butter mixture along with the vanilla extract.
Step 4
Using a teaspoon, scoop the dough, roll it into a ball, and place it on the baking sheet. Bake for 30 minutes.
Step 5
Sift the powdered sugar and ground cinnamon into a bowl. While the cookies are still warm, roll them in this mixture and cool on a wire rack.
