- Egg white 4 pieces
- Powdered Sugar 5 oz

Step 1
Preheat the oven to 210°F (fan oven — 230°F) and line 2 baking sheets with parchment paper or foil.
Step 2
Carefully separate the yolks from the whites. Place 4 large egg whites in a large clean bowl. Beat with a mixer on medium speed until the mixture resembles a fluffy cloud and holds peaks when the whisk is lifted.
Step 3
Increase the speed and start adding fine sugar one tablespoon at a time, beating for 3–4 seconds after each addition. It is important not to overbeat while slowly adding the sugar. The mixture should be glossy and thick.
Step 4
Sift the powdered sugar and gently add one-third of the sugar to the egg whites. Mix with a metal spoon. Then gradually add the remaining powdered sugar. It is important not to stir too much.
Step 5
Using a dessert spoon, carefully place the mixture onto the baking sheet. Shape it into an oval using another dessert spoon. Bake for 90–100 minutes in a fan oven or 75 minutes in a gas oven.
Step 6
You can check the readiness of the meringues by tapping them — they should sound hollow. They should also easily come off the paper. Let them cool on the baking sheets or a rack. They can be stored in a tightly sealed container for up to two weeks or frozen.
