
Meringue with Pears, Cream, Walnuts, and Chocolate Sauce

Description

Ingredients
- Egg white 4 pieces
- Golden caster sugar 5 oz
- Salt a pinch
- Walnuts 5 oz
- Liquid dark chocolate 5 oz
- Heavy cream 15 oz
- Vanilla salt to taste
- Orange zest to taste
- Powdered Sugar 0 oz
- Fig to taste
- Canned Pears in Light Syrup 30 oz
Step-by-Step Guide
Step 1
Preheat the oven to 300°F. Line a baking sheet with parchment paper.
Step 2
Separate the egg whites and beat them at medium speed until stiff peaks form. Without turning off the mixer, gradually add the sugar and a pinch of salt. Switch the mixer to high speed and beat for 8–10 minutes.
Step 3
Stick the edges of the parchment paper to the baking sheet by dropping some meringue at the corners. Spread all the meringue onto the baking sheet and smooth it out with the back of a spoon. Place it in the oven and bake for one hour.
Step 4
Toast the chopped walnuts in a dry skillet until golden brown (about 5–7 minutes).
Step 5
Drain the pears, reserving half of the syrup. Cut the pears into medium pieces. Pour the remaining syrup into a saucepan, bring to a boil over medium heat. Remove from heat and add the broken chocolate, stirring until melted.
Step 6
After an hour, remove the meringue, let it cool, and transfer it to a serving plate. Whip the cream with powdered sugar and vanilla until soft peaks form.
Step 7
Top the meringue with walnuts, cream, drizzle with chocolate sauce, and arrange the pears on top. Add more cream, pears, walnuts, and garnish with figs. Finally, drizzle with the remaining chocolate sauce and sprinkle with orange zest.
Step 8
Serve immediately.
