Meringue with mango and passion fruit filling
Ingredients
- Egg white 4 pieces
- Brown Sugar 5 oz
- Mango 1 piece
- Powdered Sugar 5 oz
- Lime 1 piece
- Passion Fruit 2 pieces
- Cream 10 fl oz
Step-by-Step Guide
Step 1
Preheat the oven to 230°F. Line two baking sheets with parchment paper and lightly grease with oil.
Step 2
Whip the egg whites until stiff peaks form. Add 1 tablespoon of powdered sugar and whip again until the mixture is thick. Then add the brown sugar.
Step 3
Place meringue on the baking sheet, leaving a good distance between each piece. Make a small indentation in the center of each meringue. Bake for about 1 hour at low heat.
Step 4
Remove from the baking sheet, place on a wire rack, and let cool.
Step 5
Peel the mango, remove the pit, cut into pieces, and place in a bowl. Add lime juice and mix. Fill each meringue with the filling.
Step 6
Cut the passion fruits, scoop out the pulp and juice, and mix with the zest. Drizzle the meringues with the passion fruit sauce.
