Ingredients

  • Salt a pinch
  • Egg white 2 pieces
  • Sugar 10 oz
  • 33% Cream 0 fl oz
  • Mascarpone Cheese Unagrande 5 oz
  • Fresh Berries to taste

Step-by-Step Guide

Step 1

For the meringue, whip 2 egg whites with a pinch of salt until foamy, gradually adding 150 grams of sugar. Whip until thick. Transfer the mixture to a pastry bag and pipe small rounds with edges on a baking sheet. Dry in a preheated oven at 210°F for 1 hour.

Step 2

For the cream, whip 50 ml of 33% cream with 100 grams of sugar and 150 grams of mascarpone cheese.

Step 3

Allow the finished meringue to cool. Fill with cream and decorate with berries and mint leaves.
