Meringue Roll with Strawberries
Ingredients
- Sugar 10 oz
- Egg white 5 pieces
- Corn Starch 0 oz
- Chopped almonds 5 oz
- Powdered Sugar 0 oz
- 33% Cream 0 fl oz
- Mascarpone Cheese Unagrande 15 oz
- Vanilla extract ½ spoons
- Strawberry 10 oz
Step-by-Step Guide
Step 1
Beat the egg whites with sugar until stiff peaks form.
Step 2
Add 100 g of almond flakes and cornstarch, and gently fold in from the bottom upwards to prevent the egg whites from deflating.
Step 3
Evenly spread the meringue onto a silicone mat or parchment paper. Place it in an oven preheated to 330°F for 25 minutes. Allow the finished meringue to cool on a wire rack.
Step 4
Cut the strawberries into quarters.
Step 5
Mix the mascarpone with powdered sugar (30 g), cream, and vanilla extract.
Step 6
Flip the cake layer onto a board and carefully remove the parchment paper.
Step 7
Evenly spread the cream over the cake layer, leaving a 1–2 cm border from the edges.
Step 8
Make small cuts along the edges of the meringue with a knife to make it easier to roll.
Step 9
Arrange the strawberries on the cream.
Step 10
Roll the log without compressing it.
Step 11
Trim the edges and sprinkle the finished roll with almond flakes and powdered sugar.
