Meringue Cake with Raspberries

Ingredients

  • Meringue 5 oz
  • Chopped almonds 5 oz
  • Heavy cream 15 oz
  • Powdered Sugar 2 tablespoons
  • Raspberry leaves 5 oz

Step-by-Step Guide

Step 1

Line the inside of a springform pan with parchment paper.

Step 2

Divide the meringue (I used store-bought meringues) into three parts. Break one portion into small pieces and place it at the bottom of the prepared pan.

Step 3

Whip the cream with powdered sugar until it reaches a thick cream consistency, then add all the hazelnuts and raspberries, and whip again.

Step 4

Add the second portion of broken meringue to the cream, gently mix with a spoon, and pour into the pan.

Step 5

Smooth the top, crumble the remaining meringues on top, cover with plastic wrap or foil, and place in the freezer overnight.

Step 6

Before serving, transfer to the refrigerator for a couple of hours or let it sit at room temperature for a while.
