Ingredients
- Egg white 4 pieces
- Brandy 1 teaspoon
- Powdered Sugar 10 oz
- Cream 10 fl oz
- Hazelnut 0 oz
- Pineapple 1 piece
- Sugar 3½ cups
Step-by-Step Guide
Step 1
Preheat the oven to 230°F.
Step 2
Line a baking sheet with parchment paper.
Step 3
Whip the egg whites in a water bath with sugar and brandy.
Step 4
Spread the meringue on the parchment, shaping it according to the baking sheet. Bake for 40–45 minutes until the top is golden and the inside is soft. Let cool.
Step 5
Whip the cream until it holds its shape, then spread it over the meringue and sprinkle with toasted chopped hazelnuts. Cover with plastic wrap, place in a cool place, and let sit for 3 hours.
Step 6
Line a baking sheet with parchment paper, arrange the pineapple rings in a single layer. Sprinkle with sugar and cook until golden. Let the pineapples cool.
Step 7
Dust the finished cake with powdered sugar. Serve the baked pineapple slices with the cake.
