Melon with Blackcurrant Jelly
Ingredients
- Gelatin 2¼ teaspoons
- Water 10 fl oz
- Fresh Mint 6 stems
- Crème de Cassis 5 fl oz
- Watermelon 0 lbs
Step-by-Step Guide
Step 1
In a saucepan, combine the gelatin and water. Let it sit for 5 minutes. Then place it over low heat and stir until the gelatin dissolves, about 2–3 minutes. Then stir in the mint, remove from heat, and let it sit for 10 minutes.
Step 2
Remove the mint stems and squeeze out all the liquid. Stir in the liqueur, and pour the mixture into a small mold. Refrigerate until set for a few hours or overnight.
Step 3
Cut the melons in half (it's better to use 2 small ones) and remove the seeds. Place them on plates and fill the center of each melon with the jelly. Garnish with mint and serve immediately.
