  • Watermelon 1 piece
  • Lavender flowers 1 tablespoon
  • Honey 5 oz
  • Safflower Oil to taste

Step-by-Step Guide

Step 1

Pour honey into a saucepan along with 3 tablespoons of water. Bring to a boil. Add the lavender flowers and simmer for 2 minutes. Remove from heat.

Step 2

Cut the melon into 12 slices.

Step 3

Lightly grease the surface of the griddle with oil; heat to medium temperature.

Step 4

Place the pieces of melon in the pan and sauté for 6–8 minutes on each side.

Step 5

Turn off the griddle and drizzle the melon slices with honey-lavender syrup. Caramelize for 2–3 minutes, then flip the slices and allow the melon to soak up the caramel syrup.

Step 6

Serve immediately with a roll and a scoop of ice cream or sorbet.
