Megrelian Khachapuri

Ingredients

  • Wheat Flour 0 lbs
  • Sugar 1½ teaspoons
  • Salt 2 teaspoons
  • Dry yeast 0 oz
  • Safflower Oil 0 fl oz
  • Butter 0 oz
  • Skim Milk 10 fl oz
  • Imeretian cheese 0 oz
  • Suluguni Cheese 5 oz
  • 10% cream 1 teaspoon
  • Chicken Egg 1 piece
  • Water 10 fl oz

Step-by-Step Guide

Step 1

Dilute 350 ml of milk with warm water.

Step 2

In 100 ml of the liquid, add sugar, salt, and yeast, and let it sit for an hour.

Step 3

Combine the yeast mixture with sifted flour and softened butter.

Step 4

Knead the dough, gradually adding the remaining liquid.

Step 5

Pour in the vegetable oil.

Step 6

Let it rest in a warm place.

Step 7

When the dough rises, mix it and let it sit for another 30 minutes.

Step 8

Divide into 4 portions and roll out.

Step 9

Grate the cheese and place it in the center of each circle.

Step 10

Pinch the edges, turn it seam side down, and roll it out with a rolling pin.

Step 11

Beat the egg, combine it with 2 teaspoons of milk and sour cream.

Step 12

Brush the khachapuri with the mixture and sprinkle with cheese.

Step 13

Bake for 15–20 minutes at 430°F.
