Mediterranean Tomato Soup with Squid

Ingredients

  • Spanish onions ½ heads
  • Garlic 3 cloves
  • Olive Oil 4 spoons
  • Paprika ½ spoons
  • Dried Rosemary ½ spoons
  • Dry White Wine 0 fl oz
  • Canned Tomatoes (Pelati) 20 oz
  • Lemon ¼ pieces
  • Sugar 2 spoons
  • Ciabatta 2 pieces
  • Squid 5 oz
  • Fresh basil leaves 2 sprigs
  • Salt to taste
  • Ground Black Pepper to taste

Prepare all the ingredients.

Peel and finely chop the red onion and garlic.

Sauté them in olive oil along with paprika and oregano until they are tender and lightly golden.

Pour in the wine and let it reduce slightly.

After 30 seconds, add chopped tomatoes and 300 ml of water. Reduce the heat and simmer the soup for 5 minutes.

Season with salt and pepper, add lemon juice and sugar, then remove the soup from heat.

Toast the bread slices in a toaster or dry-fry them in a skillet until golden brown.

Slice the squid into rings about 1.5 cm thick or into small squares.
