Mediterranean Rabbit Soup
Ingredients
- Onion 1 head
- Rabbit ½ piece
- Garlic 2 cloves
- Orange Bell Peppers 1 piece
- Pasta (corkscrew) 5 oz
- Chinese green beans 0 oz
- Dry White Wine ½ cup
- Olive Oil 2 tablespoons
- Fresh basil leaves 1 teaspoon
- Salt to taste
- Ground Black Pepper to taste
- Herbes de Provence 1 teaspoon
Step-by-Step Guide
Step 1
Pour 1.5 liters of water over the rabbit, bring to a boil, skim off the foam, and simmer on low heat until cooked, about 1-1.5 hours. Strain the broth and remove the meat from the bones.
Step 2
Finely chop the onion and garlic, and sauté until translucent in olive oil.
Step 3
Add the wine, reduce by half, then add the broth and herbs.
Step 4
Cook the pasta al dente (preferably small pasta), and rinse with boiling water.
Step 5
Dice the bell pepper.
Step 6
Add the meat, bell pepper, and green beans to the broth, cook for 5 minutes, add the pasta, season with salt and pepper, and serve immediately.
