
Meatball Soup with Cauliflower

The soup cooks for a total of 15 minutes after boiling.
Ingredients
- Lean Beef 15 oz
- White Part of Leek 1 piece
- Scallions 1 piece
- Carrot 1 piece
- Onion ½ piece
- Quail Egg 2 pieces
- Cauliflower 5 oz
- Chili Flakes to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Chop the leek and green onion.
Step 2
Grate the carrot on a coarse grater.
Step 3
Finely chop the onion.
Step 4
Add a couple of quail eggs.
Step 5
Add ground black pepper and salt.
Step 6
Mix the onion and eggs with the ground beef.
Step 7
Form balls from the ground beef.
Step 8
Put 1.5 liters of water on high heat. Add salt.
Step 9
Place the meatballs in the boiling water. Reduce the heat.
Step 10
Add the carrot.
Step 11
Finely chop the cauliflower and add salt.
Step 12
Add the cauliflower to the soup.
Step 13
After 10 minutes of boiling, add the leek.
Step 14
One minute before it’s ready, add the green onion and chili. Salt to taste.
