Description

Meatballs are also known as hedgehogs, thanks to the grainy texture created by the rice. Meatball soup is a hearty dish that can be enjoyed even without bread, if desired.

Ingredients

  • Water 5 qt
  • Onion 3 pieces
  • Vegetable Oil 3 spoons
  • Carrot 1 piece
  • Potato 3 pieces
  • Salt 0 oz
  • Ground meat 10 oz
  • Chicken Egg 1 piece
  • Ground Black Pepper 0 oz
  • Parsley 1 bunch
  • Rice ¼ glasses

Step-by-Step Guide

Step 1

In the minced meat, we will add finely chopped onion (1 piece), an egg, salt, and pepper (optionally, finely chopped parsley can be added), and rinsed rice. We will mix everything together. Then we will shape the mixture into meatballs.

Step 2

Peel the onion and chop it finely, wash the carrot, peel it, and cut it into matchsticks. Sauté the onion in vegetable oil until it becomes translucent, then add the carrot. Cook until softened. Add 1 ripe tomato, peeled and chopped. Simmer for 3–4 minutes.

Step 3

Place a pot of water on the heat, add salt, and bring it to a boil. Once the broth is boiling, add the meatballs and simmer for 5–10 minutes.

Step 4

Add the meatballs to the boiling broth and simmer for 5 to 10 minutes.

Step 5

Wash the potatoes, peel them, cut into small cubes, and add them to the boiling broth. Allow the broth to come to a boil, then reduce the heat, cover the pot with a lid, and cook until the potatoes are tender.

Step 6

Once the cooked meatballs float to the surface, add the sautéed vegetables, reduce the heat, and simmer for a few more minutes.

Step 7

Ladle the finished soup into bowls, add sour cream, and sprinkle with herbs.
