Meatball and Rice Soup

Ingredients

  • Rice ½ cup
  • Salad Potatoes 3 pieces
  • Onion 1 piece
  • Carrot 1 piece
  • Safflower Oil 2 tablespoons
  • Spices to taste
  • Bay leaf to taste
  • Herbs to taste
  • Pork Mince 15 oz

Step-by-Step Guide

Step 1

Place a pot with 2–2.5 liters of water on the heat.

Step 2

Bring to a boil.

Step 3

Add the peeled and diced potatoes.

Step 4

Add the rice (rinse the rice beforehand if necessary).

Step 5

Add the bay leaf.

Step 6

Reduce the heat to medium, but not low.

Step 7

Cook for 5–7 minutes.

Step 8

While the rice and potatoes are cooking, form meatballs from the minced meat, adding spices.

Step 9

Grate the peeled carrot on a coarse grater.

Step 10

Finely chop the onion.

Step 11

Sauté the carrot and onion in heated vegetable oil for 2–3 minutes over medium heat, stirring.

Step 12

Add the sautéed vegetables to the soup.

Step 13

Carefully drop in the meatballs and cook for another 10 minutes.

Step 14

Add spices to taste: black peppercorns, allspice, oregano, etc.

Step 15

When serving, garnish with finely chopped fresh herbs.
