Description
The broth should not be overly salted, as all the ingredients are quite salty. It's better to taste the solyanka at the very end of cooking and add salt if necessary.
Ingredients
- Beef 15 oz
- Sausages 4 pieces
- Semi-Smoked Sausage 5 oz
- Pickled Cauliflower 3 pieces
- Ham 5 oz
- Onion 1 piece
- Parsley 1 bunch
- Olives stuffed with lemon 1 can
- Passata Tomato Sauce 2 spoons
Step-by-Step Guide
Step 1
Prepare a broth using beef (or pork), adding bay leaves and black pepper.
Step 2
Cut the meat from the broth, sausages, salami, and ham (or smoked sausage). Finely chop the onion, cucumbers, and parsley, and sauté them for about 10 minutes with tomato paste.
Step 3
Add the sautéed mixture to the broth and cook for no more than 10 minutes. Then add the meat, sausages, ham, and salami. Cook until the broth comes to a boil. Pour the olives along with their brine into the solyanka (the olives should be pitted). Bring to a boil and then immediately turn off the heat. Serve with a slice of lemon and sour cream.
