Ingredients

  • Coarse matzo 1 glass
  • Chicken Broth 0 qt
  • Chicken Egg 4 pieces
  • Olive Oil 2 spoons
  • Chopped Sage Leaves 3 spoons
  • Salt to taste
  • White Pepper (whole) to taste

Step-by-Step Guide

Step 1

Separate the egg whites and yolks. Mix all the ingredients (except for the broth) with the yolks, along with 60 ml of water.

Step 2

Whisk the egg whites until thickened. For better results, you can add a pinch of salt. Gently fold the egg white foam into the main mixture. Mix well but gently. Cover the batter with plastic wrap and refrigerate for an hour.

Step 3

Roll the dough into balls the size of golf balls and place them in the boiling chicken broth. Cook for about twenty minutes. Garnish with parsley and green onions before serving.
