Description

Recipe taken from a book by John Smith 'Armenian Cuisine' (1960).

Ingredients

  • Fresh Rose Hips 10 oz
  • Sugar 0 oz

Step-by-Step Guide

Step 1

Sort the fresh rose hips, remove damaged fruits, and then rinse thoroughly.

Step 2

Boil the prepared rose hips and strain through a sieve to remove the seeds.

Step 3

Dilute the strained mass with a glass of broth, pour into a pot, add a glass of hot water, sugar, and, stirring, heat over low heat until boiling.

Step 4

After that, remove the foam, take the pot off the heat, and cool the soup.

Step 5

If using dried rose hips to prepare masramatsun, sort them, rinse thoroughly, pour boiling water over them, and let them soak for 10–12 hours.

Step 6

Strain the prepared fruits through a sieve.

Step 7

Combine the strained mass with the water in which the rose hips were soaked, add sugar, bring to a boil (over low heat), then remove the foam and cool the finished soup.
