Description
Instead of egg yolk, the soup can be enriched with carrot juice.
Ingredients
- Milk 5 fl oz
- Salad Potatoes 2 pieces
- Butter 0 oz
- Egg white ½ piece
- Water 10 fl oz
Step-by-Step Guide
Step 1
Peel the potatoes, rinse them, cover with a glass of cold water, and boil until soft.
Step 2
Separate the broth, and mash the cooked potatoes through a fine sieve. Dilute the resulting puree with the strained broth and milk, add salt, and bring to a boil again.
Step 3
Before serving, enrich the soup with the egg yolk mixed with butter.
