Mascarpone for Tiramisu

Description
This amount of cream yields 500 grams of mascarpone.
Ingredients
- Cream 22% 0 qt
- Citric Acid ¼ teaspoon
Step-by-Step Guide
Step 1
Pour the cream into a clean, dry saucepan and heat to 165°F.
Step 2
Dissolve ¼ teaspoon of citric acid in 1 teaspoon of water and add it to the cream.
Step 3
Gently stir with a whisk over very low heat for 10 minutes (the cream will thicken as soon as you add the acid).
Step 4
Fold a towel (without seams) into 2 layers (or cheesecloth into 4 layers), place it over a colander, and pour in the cream.
Step 5
Stir occasionally with a spoon to help the whey separate better.
Step 6
Once the mascarpone cools, place it in the refrigerator in the colander.
