Ingredients
- Oreo Cookies 10 oz
- Butter 5 oz
- Gelatin 4 teaspoons
- Vanilla salt to taste
- Heavy cream 10 fl oz
- Raspberry leaves 20 oz
- Powdered Sugar 10 oz
- Coconut flakes 5 oz
- Water ⅓ cup
- Mascarpone Cheese Unagrande 20 oz
Step-by-Step Guide
Step 1
Crush the oat cookies, add grated coconut and melted butter. Mix thoroughly and evenly spread on a baking tray. Place in the refrigerator for 30 minutes.
Step 2
Mix the gelatin with ⅓ cup of water and let it swell (about 5 minutes). In a bowl, mix the mascarpone, vanilla seeds, vanilla sugar, and powdered sugar. Whip well, add the whipped cream, and whip for another couple of minutes until the mixture becomes fluffy.
Step 3
Warm the gelatin mixture until the granules dissolve completely, stir, and cool to room temperature.
Step 4
Gently mix the mascarpone with the gelatin. Spread the resulting mixture over the layer of cookies, top with raspberries, and leave in the refrigerator for 2–3 hours.
