Marinated zucchini like mushrooms
Ingredients
- Courgette 5 lbs
- Garlic 1 head
- Vegetable Oil 5 fl oz
- 9% Vinegar 5 fl oz
- Sugar 5 oz
- Parsley 0 oz
- Dill 0 oz
- Ground Black Pepper 1 tablespoon
- Salt 1 tablespoon
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Wash the zucchini and cut them into cubes. Young zucchini can be left unpeeled, but with more mature ones, you should remove the skin and seeds.
Step 3
Chop the herbs finely.
Step 4
Add the garlic, minced through a press, to the zucchini. Stir in salt, sugar, and pepper.
Step 5
Pour in the vinegar and vegetable oil, mix well, and let it sit for 2 hours.
Step 6
Add the herbs to the zucchini, transfer to jars, and cover with lids without sealing.
Step 7
Place a kitchen towel at the bottom of a large pot, set the jars on top, and pour in water until it reaches the jars' shoulders.
Step 8
Bring to a boil and sterilize the jars with zucchini for 15 minutes.
Step 9
Seal the jars with zucchini with lids, turn them upside down, and cover with a blanket. Leave them until they are completely cool.
Step 10
Store in a cool, dark place.
