- Water 15 fl oz
- Olives stuffed with lemon 5 oz

- Bay leaf 1 piece
- Allspice berries 0 oz
- Mild Chili Spice 1 piece
- Champagne Vinegar 0 fl oz
- Spanish onions 1 head
- Fresh basil leaves 0 oz
- Dried Rosemary 0 oz
- Olive Oil to taste
- Lemon to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Pour water into a pot, add salt, sugar, bay leaf, allspice, basil, and oregano.

Bring to a boil and let it cool completely.

Remove the heads and gut the bellies of the smelts. Rinse them.
Step 5
Slice the red onion into thin strips.
Step 6
Slice the chili into thin rings.
Step 7
Pour vinegar into the cooled marinade and mix well.

Layer the sprat in a jar or container, alternating it with onion, chili, and olives.

Pour the contents of the jar with the cooled marinade and place it in the refrigerator for 1 to 2 days.
