Marinated Red Peppers
Ingredients
- Orange Bell Peppers 10 lbs
- Unrefined Sunflower Oil 0 qt
- 9% Vinegar 15 fl oz
- Salt 5 tablespoons
- Green peppercorns 10 pieces
- Parsley 5 oz
- Celery salt 5 oz
- Garlic 4 heads
Step-by-Step Guide
Step 1
Wash the red peppers, remove the seeds and stems. Sort, wash, and chop the parsley, garlic, and celery.
Step 2
In a large enameled pot, pour in the sunflower oil, vinegar, add salt, and bring to a boil. Carefully lower the red peppers into the boiling solution for 15-20 minutes. The red peppers will change color slightly. Then place them on a sieve.
Step 3
In a jar, place the red peppers, garlic, parsley, celery, black peppercorns, pour in the remaining solution, cover with a canning lid, sterilize for 40 minutes, and then seal.
