Step 1
Finely chop the mango flesh. Grate the ginger and onion, place them in a saucepan with butter, sprinkle with sugar, set over heat, and simmer for ten minutes.
Step 2
Roll out the puff pastry and place it on a baking sheet. Spread the mango puree evenly over the pastry. Fold the edges to prevent the puree from spilling over the sides.
Step 3
Place the baking sheet with the mango pie in the oven preheated to 390°F for ten minutes.
