Ingredients

  • Canned Peaches 15 oz
  • Butter 5 oz
  • Brown Sugar 5 oz
  • Farm fresh eggs 2 pieces
  • Self-rising flour 0 oz
  • Ground Almonds 2 tablespoons
  • Coconut Milk 2 tablespoons
  • Lime Juice 2 tablespoons

Step-by-Step Guide

Step 1

Preheat the oven to 390°F. Grease 4 muffin tins (250 ml each) with butter. Place pieces of mango at the bottom.

Step 2

Beat the softened butter and 125 grams of sugar with a mixer until creamy. Gradually add the lightly beaten eggs, mixing well. Add the sifted flour, almonds, and coconut milk. Transfer the mixture to the tins and bake for 25 minutes until done.

Step 3

For the syrup, pour the lime juice, remaining sugar, and 125 ml of water into a small saucepan and heat over low heat until the sugar dissolves. Increase the heat and boil for 10 minutes.

Step 4

Using a wooden stick, make many holes in the baked pastries and drizzle with the syrup. Let sit for 5 minutes, turn onto a plate, and serve.
