Description
A recipe for exotic mango jam with citrus fruits and dark rum.
Ingredients
- Mango 140 oz
- Bananas 35 oz
- Oranges 2 pieces
- Lemon 1 piece
- Lime 1 piece
- Sugar 70 oz
- Dark rum 5 fl oz
Step-by-Step Guide
Step 1
Wash the fruits under hot water.
Step 2
Peel the mango.
Step 3
Cut the mango into large pieces.
Step 4
Zest the orange.
Step 5
Peel the remaining skin. Cut the peeled oranges into large pieces.
Step 6
Peel the bananas.
Step 7
Cut the peeled bananas into large pieces.
Step 8
Zest the lime and cut it into small pieces.
Step 9
Zest the lemon.
Step 10
Cut the lemon into medium pieces.
Step 11
Place all the ingredients in a large pot (you should have about 6 liters of chopped fruit).
Step 12
Pour the granulated sugar into the pot with the fruit.

Mix all the ingredients.
Step 14
Leave for a few hours to allow the fruit to release juice.

After the juicing process is complete, place the pot with the fruit over medium heat and bring to a boil.

Cook for 5 minutes over low heat.

Allow the jam mixture to cool completely.

Bring the jam mixture to a boil again, cook for 5 minutes, then add 150 ml of dark rum and cook for another 5 minutes to allow the alcohol to evaporate.

The liquid mango jam with rum is ready for use; jar it in sterilized jars.
Step 20
To make the mango jam thicker, it needs to be cooked down a third time. Bring it to a boil and cook for about 1 hour until the desired thickness is reached.

Add another 50 ml of dark rum and cook for another 5 minutes.

Mango jam with bananas, oranges, lime, and lemon is ready.
Step 23
The secret ingredient of dark rum gives the jam subtle notes of oak and caramel. For storage, the thicker jam can also be jarred in sterilized jars.
