Ingredients
- Mango 2 pieces
- Lime 3 pieces
- Whole egg 4 pieces
- Raw cane sugar 5 oz
- Cream 10 fl oz
Step-by-Step Guide
Step 1
Line a loaf pan with plastic wrap.
Step 2
Make a puree from the mango, grated lime zest, and juice. Blend everything in a blender.
Step 3
In a double boiler, whisk the yolks with sugar until the volume doubles. Remove from heat and add to the mango puree. Let the mixture cool.
Step 4
Whip the cream well, add it to the mango mixture, and pour into the prepared pan. Place in the freezer for at least 8 hours or overnight.
