Ingredients

  • Sugar 1 cup
  • Farm fresh eggs 6 pieces
  • Wheat Flour 1 cup
  • Citrus Zest Mix 1 tablespoon
  • Cream 10 oz

Step-by-Step Guide

Step 1

Separate the egg whites from the yolks. Whip the egg whites with a mixer, gradually adding sugar. Whip until the foam stands. That is, if you place a spoon in the foam, it should stand upright.

Step 2

While whipping, add the yolks and continue to whip.

Step 3

Gradually add the flour.

Step 4

Grate the zest and add it to the batter.

Step 5

Grease the cake pan with butter and pour the batter into the pan. Bake at 320°F for 40-45 minutes.

Step 6

For the cream: Whip the cream with 1 cup of sugar and 2 tablespoons of cocoa.

Step 7

Remove the pan from the oven and cover it with a napkin or towel until completely cooled.

Step 8

Remove the cake from the pan and cut it in half lengthwise. Spread cream on the bottom half, and place sliced mandarin segments on top of the cream.

Step 9

Cover with the top half of the cake. Spread cream on top and decorate with mandarin slices. You can also grate chocolate over the mandarins.

Step 10

Place in the refrigerator to soak for a few hours.
