Ingredients
- Vegetable Oil 0 fl oz
- Lamb 25 oz
- Onion 5 oz
- Water 5 qt
- Mung Beans 5 oz
- Rice 5 oz
- Basil 5 oz
- Cilantro 5 oz
- Scallions 0 oz
- Salt to taste
- Ground Black Pepper to taste
- Matsoni to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Cut the meat into small pieces.
Step 3
Dice the onion.
Step 4
Sear the meat in a heavy-bottomed pot or cauldron with vegetable oil. It's best to do this in batches to achieve a golden crust.
Step 5
Add the onion to the meat in the pot and sauté, stirring, until the onion becomes translucent.
Step 6
Pour in the water and bring to a boil.
Step 7
Add the mung beans and cook for 40–45 minutes until tender.
Step 8
Add the rice and cook for another 20 minutes.
Step 9
Chop all the herbs and add them to the soup at the end of cooking. Season with salt to taste.
Step 10
Serve the mashkhurd with matsoni.
