
Macaron Pastries with Three Fillings

Description
Authentic French macarons made with four different fillings. The filling consists of buttercream with the addition of strawberry jam, cocoa, pistachios, and lemon zest. It is very important for the cookies to be of equal size, as they are assembled from two halves. Therefore, for convenience, it is best to draw circles of the same diameter on wax paper; this will make it much easier to pipe uniform cookies.
Ingredients
- Egg white 6 pieces
- Ground Almonds 10 oz
- Powdered Sugar 15 oz
- Butter 10 oz
- Vanilla salt 1 tablespoon
- Cream 1 tablespoon
- Cocoa Powder 0 oz
- Salt a pinch
- Pistachios 0 oz
- Chili jam 1 tablespoon
- Red Food Coloring 0 oz
- Citrus Zest Mix 1 tablespoon
Step-by-Step Guide
Step 1
Separate the egg whites from the yolks. Whisk the egg whites until fluffy. Add powdered sugar and beat until smooth. Incorporate the ground almonds and gently fold to combine.
Step 2
Divide the mixture into 4 portions. Add a drop of food coloring to each portion.
Step 3
Fill a piping bag and place the cookies on a baking sheet lined with parchment paper.
Step 4
Let the cookies rest for 30 minutes. The tops of the cookies should firm up slightly. Then, place the cookies in the oven. Bake for about 15 minutes at 340°F. Remove from the oven, let them cool slightly on the baking sheet, then transfer to a wire rack to cool completely.
Step 5
In the meantime, prepare the buttercream. To do this, beat the butter with powdered sugar, then add the cream and vanilla. You can use granulated sugar instead of powdered sugar.
Step 6
Divide the cream into 4 equal portions and add to each portion: 1 teaspoon of jam to one, cocoa to another, lemon zest to the third, and pistachios to the fourth. This will create 4 different types of filling.
Step 7
Now you can assemble the pastries. Layer the pink macarons with strawberry cream, the green ones with pistachio cream, the brown ones with cocoa cream, and the yellow ones with lemon cream.
