Ingredients

  • Wheat Flour 10 oz
  • Salt ½ teaspoon
  • Breadcrumbs 0 oz
  • Walnuts 5 oz
  • Lemon ½ piece
  • Ground Cinnamon 2 teaspoons
  • Vegetable Oil 0 fl oz
  • Butter 5 oz
  • Light Raisins, Seedless 5 oz
  • Sugar 5 oz
  • Apple 4 pieces
  • Water 5 fl oz
  • Powdered Sugar to taste

Step-by-Step Guide

Step 1

Mix the flour, salt, vegetable oil, and cold water to knead a smooth, elastic dough. Grease the dough ball with oil and cover with plastic wrap, leaving it for 30 minutes.

Step 2

Fry the breadcrumbs in butter, stirring.

Step 3

Chop the walnuts and mix them with the rinsed (dry) raisins.

Step 4

Peel the apples and cut them into small cubes, mixing them with sugar, cinnamon, and lemon juice.

Step 5

Sprinkle the work surface with flour and gently roll out the dough with a rolling pin. Then transfer the dough onto a large clean towel, also sprinkled with flour. Slide your hands under the dough palms down and carefully stretch it until it is thin enough to see the pattern on the fabric through it. Try to act quickly so the dough doesn't dry out, but don't tear it. You can either cut off the thick edges or stretch them as thin as the rest of the dough.

Step 6

Brush the dough with melted butter and sprinkle with the prepared breadcrumbs. Leave a 4–5 cm margin from the edges, and on one of the long sides, leave 15 cm — this will be the top, crispy layer of the strudel. Evenly spread the filling over the breadcrumbs. Fold the dough over the filling from the long side (where we left a small free edge of dough) using the towel. Also fold the edges of the dough from the sides to prevent the filling from leaking during baking.

Step 7

While rolling, brush the dough with a little oil.

Step 8

Transfer the finished strudel seam side down onto a baking sheet lined with parchment paper. Place it in the preheated oven and bake for 40–45 minutes at 355°F. During baking, brush the strudel with oil 1–2 times.

Step 9

Sprinkle the hot strudel with powdered sugar and let it cool on a rack.
