Luxurious vegan chocolate truffles
Ingredients
- Bittersweet Chocolate 10 oz
- Coconut Milk ½ cup
- Vanilla extract ½ teaspoon
- Orange Liqueur ½ teaspoon
- Salt a pinch
- Shredded Coconut ¾ cup
- Cocoa Powder ⅓ cup
Step-by-Step Guide
Step 1
Place the chocolate in a heatproof bowl. Bring the coconut milk to a boil in a small saucepan. Remove from heat and let sit for 15 seconds.
Step 2
Pour the coconut milk over the chocolate, stirring until the chocolate melts. Add the vanilla extract, orange liqueur (if desired), and salt.
Step 3
Allow to cool to room temperature.
Step 4
Line a baking sheet with parchment paper. Scoop the mixture onto the baking sheet in portions of 1 ½ teaspoons. Place in the freezer for 30 minutes.
Step 5
Put the shredded coconut and cocoa powder in separate small bowls. Form balls from the frozen scoops of the mixture, then roll each in shredded coconut or cocoa. Return the truffles to the baking sheet and freeze again for 1 hour.
