Low-Calorie Vanilla Cheesecake
Ingredients
- Egg white 1 piece
- Semi-soft cream cheese 5 oz
- Cottage cheese 5 oz
- Honey 2 teaspoons
- Finn Crisp Traditional Crispbread 5 pieces
- Sugar Substitute to taste
- Vanilla salt to taste
Step-by-Step Guide
Step 1
For the base. Crumble the crispbreads, add honey, and mix. If it's too dry, add a little water. Spread evenly on the bottom of the mold (preferably silicone).
Step 2
Filling. Mix the cottage cheese with the cream cheese and egg. Add the sugar substitute (crushed or dissolved) and vanilla to taste. Mix until smooth. If you prefer a less sweet classic, add a splash of lemon juice.
Step 3
Pour over the crispbreads. Bake for about 1 hour at a low temperature, checking for doneness with a toothpick (if undercooked, it won't hold its shape). To prevent browning, cover with foil.
