Long Raisin Buns with Glaze
Ingredients
- Wheat Flour 20 oz
- Dry Malted Milk Powder 0 oz
- Raw cane sugar 5 oz
- Dry yeast 0 oz
- Butter 5 oz
- Chicken Egg 1 piece
- Whole egg 1 piece
- Light Raisins, Seedless 5 oz
- Red Food Coloring to taste
- Powdered Sugar 5 oz
Step-by-Step Guide
Step 1
Mix 375 g of flour, dry milk, yeast, cane sugar, raisins, and half a teaspoon of salt. Make a well in the center. Mix 60 g of softened butter, the egg, and 250 ml of warm water, then add to the flour. Knead the dough for 2 minutes.
Step 2
Add remaining flour as needed to achieve a soft dough. Transfer to a floured surface and knead for 10 minutes until soft and elastic. Place in an oiled bowl and drizzle with vegetable oil on top. Cover with plastic wrap and let rise in a warm place for 1 hour.
Step 3
Grease 2 baking sheets with oil. Preheat the oven to 355°F (350 degrees Fahrenheit). Punch down the dough for 1 minute and divide it into 12 pieces. Shape into long sausages, each 15 cm long. Place on the baking sheets, spaced 5 cm apart. Cover with plastic wrap and let rise in a warm place for 20-25 minutes.
Step 4
Beat the yolk with 1.5 teaspoons of water. Brush the dough with the mixture. Bake for 12-15 minutes until golden brown.
Step 5
For the glaze, mix powdered sugar, 20 g of softened butter, and 2-3 teaspoons of water. Add the food coloring, mix well, and spread over the buns.
