Ingredients

  • Lobster tails 1 piece
  • Garlic 4 cloves
  • Carrot 10 oz
  • Scallions 5 oz
  • Celery stalk 5 oz
  • Courgette 5 oz
  • Tomatoes 5 oz
  • Wheat Flour 3 tablespoons
  • Butter 0 oz
  • Parsley ½ bunch
  • Fish Oil 0 qt
  • Dill ½ bunch
  • Olive Oil 1 tablespoon
  • Brandy 0 fl oz
  • Dry White Wine 5 fl oz
  • Ice 5 lbs

Step-by-Step Guide

Step 1

Clean and chop the vegetables, divide the lobster into 4 parts. Sauté in a large skillet for about 15 minutes.

Step 2

Add the brandy and ignite the contents of the skillet.

Step 3

Pour in the wine. When it evaporates, add the butter with the flour, slightly sauté the vegetables and lobster, stirring constantly, and pour in the stock.

Step 4

Blanch the tomatoes, peel them, and chop, then add to the skillet along with the chopped herbs.

Step 5

After a couple of minutes, add 2 kilograms of crushed ice and cook until the mixture becomes creamy.

Step 6

Remove the lobster pieces, shell them — they will be used for garnishing the soup.

Step 7

Pass the remaining contents of the skillet through a sieve.

Step 8

Pour the strained mixture into a pot, season with salt and pepper to taste, and bring to a boil.

Step 9

Garnish the soup when serving with pieces of lobster and herbs.
