Step-by-Step Guide
Step 1
Place the chicken in a large pot and cover it with cold water, ensuring the water rises 2-3 cm above the bird. Add two halved carrots, one onion, two cloves of garlic, celery, a bay leaf, and black pepper. Bring to a boil, then reduce the heat and simmer for two hours, skimming off any foam that forms on the surface occasionally.
Step 2
Finely chop the onion, garlic clove, and chili pepper. Remove the kernels from the corn cob. Heat a skillet, pour in olive oil, and add the vegetables, sautéing them until soft.
Step 3
Remove the cooked chicken, strain the resulting broth and pour it back into the pot. Remove the skin from the chicken, chop it into small pieces, and add it to the broth.
Step 4
Add the sautéed vegetables, lime juice, salt, and oregano to the soup. Bring to a boil, adjust the salt to taste, and serve, adding diced tomatoes, avocado, chopped cilantro, and lime zest to each bowl.
