Description

If desired, the pie can be eaten frozen, like sorbet, and can also be topped with whipped cream.

Ingredients

  • Coarse flour cookies 10 oz
  • Sugar ¼ glasses
  • Butter 5 oz
  • Whole egg 3 pieces
  • Condensed Milk 1½ cans
  • Freshly squeezed orange juice 5 fl oz

Step-by-Step Guide

Step 1

Crumble the cookies using a food processor or a rolling pin, and mix the crumbs with sugar. Melt the butter and pour it into the mixture.

Step 2

Press the future base for the pie into a removable pie dish, spreading it evenly across the bottom and packing it down. Bake in a preheated oven at 340°F for about 8 minutes, then let it cool completely.

Step 3

In a heatproof bowl, place the egg yolks and sweetened condensed milk, then set it over a pot of boiling water and whisk 'au bain-marie' until airy. Gradually stir in the lime juice.

Step 4

Spread the lime cream over the pie crust and place the mold in the freezer for 3–4 hours.

Step 5

Take out 20 minutes before serving and let it warm up to room temperature.
