Lime Cheesecake Ice Cream
Ingredients
- 33% Cream ½ cup
- Philadelphia Cheese 5 oz
- Condensed Milk 10 oz
- Lime Juice ½ cup
- Salt a pinch
- Shortbread Cookies 6 pieces
- Orange zest to taste
- Granulated sugar to taste
- Mint Leaves to taste
Step-by-Step Guide
Step 1
In a saucepan, mix the cheese, cream, and condensed milk. Add a pinch of salt and lime juice, and mix well until smooth. Tightly cover the saucepan with a lid and refrigerate for 5–6 hours or overnight.
Step 2
Place the cookies in a blender and crush them into fine crumbs.
Step 3
After the time has passed, take the saucepan out of the refrigerator, pour the cheese mixture into an ice cream maker, and churn for 20–40 minutes. In the last minute of churning, add the crushed shortbread cookies. At the end of churning, the mixture will resemble softened ice cream. Fill a container with the resulting mixture and place it in the freezer for 3–4 hours until fully set.
Step 4
If you don't have an ice cream maker, immediately pour the ice cream mixture into a container, add the crushed cookies, mix well, and place it in the freezer. Take the container out and stir the contents every half hour until set.
Step 5
Serve the ice cream in dessert cups. Beforehand, brush the edges of the cups with water and coat them inside and out with large sugar crystals. Optionally, garnish the ice cream with lime zest and mint leaves.
