Ingredients
- Canned chickpeas 1½ cups
- Leek 1 stalk
- Minced garlic 3 cloves
- Canned tomatoes 15 oz
- Spinach 20 oz
- Olive Oil 2 tablespoons
- Lemon Juice 2 tablespoons
- French Baguette 4 pieces
Step-by-Step Guide
Step 1
In a large pot, combine chickpeas, leek, garlic, and pour in 5 cups of water. Bring to a boil over medium heat.
Step 2
Reduce the heat, cover, and simmer for 5 minutes.
Step 3
Add spinach, tomatoes, and 1 tablespoon of oil.
Step 4
Season with salt and pepper to taste.
Step 5
Place a piece of baguette in deep bowls. Pour in the soup.
