Light sorrel soup with egg
Ingredients
- Chicken Broth 5 qt
- Sorrel 5 bunches
- Chicken Egg 5 pieces
- Potato 2 pieces
Step-by-Step Guide
Step 1
Bring the broth to a boil.
Step 2
Thinly slice the potatoes into wedges and add them to the broth. Season with salt to taste.
Step 3
Slice the sorrel into strips approximately 0.5 cm wide.
Step 4
When the potatoes are cooked, add all the sorrel to the broth (there should be a lot of it).
Step 5
Whisk the eggs in a bowl. Carefully pour them in a thin stream into the boiling broth, while continuously stirring vigorously with a fork in the area where the egg mixture is being poured.
Step 6
Keep on the heat for another 2 minutes. Turn off, let it sit covered for 10 minutes, then serve.
