Step-by-Step Guide
Step 1
Separate the Boston lettuce heads into leaves, stack them, and slice into thin strips.
Step 2
In a three-liter pot with a thick bottom, place the lettuce, pour in chicken broth, add a cup of water, and simmer the soup on low heat, covered, for about forty minutes.
Step 3
Using a blender, purée the soup in two batches, adding butter, grated nutmeg, salt, and pepper. Finally, warm the soup over medium heat and serve it hot.
