Lentil Spinach Soup
Ingredients
- Black Beluga Lentils 1 cup
- Spinach 5 oz
- Potato 1 piece
- Garlic 7 cloves
- Onion 1 piece
- Salt to taste
Step-by-Step Guide
Step 1
Combine all the soup ingredients (except for salt) in a large pot, add a couple of cups of water. Cook until the lentils are tender and begin to break apart. This will take between 15 to 45 minutes, depending on the pot. Add salt and blend until relatively smooth.
Step 2
Chop the onion, mix it with oil and salt, and sauté for 5–10 minutes until it turns brown. Be careful not to burn it, as it will become very bitter.
Step 3
Garnish the soup with the onion mixture and serve hot with crusty bread.
