Lentil Soup with Mint
Ingredients
- Lentils 20 oz
- Onion 1 piece
- Potato 1 piece
- Orange Bell Peppers 1 piece
- Ground Cumin 1 teaspoon
- Dried Rosemary 1 teaspoon
- Mild Chili Spice to taste
- Garlic 4 cloves
- Salt to taste
- Lemon 1 piece
- Turmeric 1 teaspoon
- Paprika 1 teaspoon
Step-by-Step Guide
Step 1
Rinse the lentils in cold water, cover with water 2 cm above, and bring to a boil. Once boiling, reduce the heat, skim off the foam, and simmer covered on low heat for about 20 minutes, adding cold water if necessary.
Step 2
Dice the bell pepper, tomato, and onion into small cubes and add them to the pot with the lentils.
Step 3
Chop the garlic and add it to the pot as well.
Step 4
When the lentils are slightly cooked and almost ready, add the dried mint to the pot, cook for another 5 minutes, then season with salt, squeeze the juice of half a lemon, add ground paprika, cumin, and turmeric, lightly mash the lentils in the pot with a masher, and let it steep for 10 minutes.
Step 5
Serve with a wedge of lemon and dried chili pepper as a seasoning (optional).
