Lentil Soup with Garlic Croutons
Ingredients
- Red Lentils ½ cup
- Water 25 fl oz
- Onion 1 head
- Carrot 1 piece
- Leek 5 oz
- Curry a pinch
- Stale Rye Bread 5 oz
- Garlic 2 cloves
- Herbs 1 bunch
- Vegetable Oil to taste
- Hunter Sausages 5 oz
- Salt to taste
- Fresh Basil 1 sprig
Step-by-Step Guide
Step 1
Pour a little vegetable oil into a heavy-bottomed pot.
Step 2
Add the chopped carrot and both types of onion.
Step 3
Stirring, sauté over low heat for about 10 minutes until the vegetables are soft.
Step 4
Add the lentils and water.
Step 5
Stir, cover with a lid, and cook for about 20 minutes until the lentils are ready.
Step 6
Add salt, curry, fresh basil, and 8 slices of hunter sausage; let it cook for another 5 minutes. (Adding sausage is optional; it adds flavor, but it's up to you.)
Step 7
Blend the finished soup with an immersion blender.
Step 8
Now for the croutons. Heat a little vegetable oil in a pan.
Step 9
Cut 3 slices of yesterday's bread into cubes, mix with herbs and finely chopped garlic.
Step 10
Fry for 2-3 minutes until golden brown.
Step 11
Serve the soup with croutons.
