Lentil Puree Soup
Ingredients
- Rice 5 oz
- Canned Mushroom Soup 20 oz
- Salt to taste
Step-by-Step Guide
Step 1
Drain the liquid from the cans of lentils and save it. Bring water to a boil in a large pot, add the rice, bring it back to a boil, and cook for 15 minutes until the rice is soft. Drain the water, rinse with cold water, and dry.
Step 2
Set aside half of the rice. Blend the other half with the lentils in a blender, in batches, with a small amount of the liquid from the cans. Transfer the lentil puree to a clean pot, adding more liquid from the can if the puree seems too thick. Heat and season with salt to taste.
Step 3
Before serving, pour the soup into a soup tureen and top with handfuls of the remaining cooked rice.
