Lentil Cream Soup
Ingredients
- Lentils 2 cups
- Butter 2 tablespoons
- Water 0 qt
- Turmeric 1 teaspoon
- English Dry Mustard 1 teaspoon
- Onion 1 head
- Salt ½ tablespoon
- Ground Cumin 1 teaspoon
- Spinach to taste
Step-by-Step Guide
Step 1
Wash the lentils, cover with cold water, add 1 tablespoon of butter, salt, and turmeric. Bring to a boil. Cover and reduce heat. Cook until the lentils are tender.
Step 2
Separately, sauté the onion in butter with cumin and mustard in a skillet.
Step 3
Cool the lentils. Pour into a blender, add the mixture from the skillet, and blend until smooth.
Step 4
You can finish the soup here, but if you have fresh spinach that you like, you can heat the mixture in a pot, add chopped spinach, and cook for 2-3 minutes.
Step 5
Serve with sour cream and parsley.
