Lentil Coconut Milk Soup
Ingredients
- Lentils 5 oz
- Chicken Broth 25 fl oz
- Coconut Milk 5 fl oz
- Onion 1 head
- Garlic 2 cloves
- Ginger 0 oz
- Red Curry Powder ½ teaspoon
- Cardamom ½ teaspoon
- Salt to taste
- Vegetable Oil 0 fl oz
Step-by-Step Guide
Step 1
Soak the red lentils overnight.
Step 2
After soaking, rinse and cover with broth.
Step 3
Finely chop the onion.
Step 4
Mince the garlic and ginger.
Step 5
Sauté the onion, garlic, and ginger in vegetable oil until the onion becomes translucent.
Step 6
Add curry powder.
Step 7
Add cardamom.
Step 8
Pour in the coconut milk. Simmer for 5–7 minutes.
Step 9
Combine the lentils and onion with the coconut milk. Blend until smooth and creamy.
Step 10
Serve.
