Lentil and Vegetable Cookies

Ingredients

  • Black Beluga Lentils 1 can
  • Canned Corn 1 can
  • Carrot 1 piece
  • Chicken Egg 1 piece
  • Spanish onions ¼ head
  • Spelt ½ cup
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Preheat the oven to 355°F.

Step 2

Chop the onion into small cubes about 2 mm.

Step 3

Peel the carrot and cut it into small cubes about 1–2 cm. Cook the carrot in water in the microwave for 4 minutes and let it cool.

Step 4

Drain and rinse the corn and lentils.

Step 5

Mix all the ingredients in a bowl, pressing slightly with a fork. Form patties about 5 cm in diameter and 2 cm high.

Step 6

Line a baking sheet with parchment paper greased with vegetable oil, and carefully place the patties on it. Put in the oven and bake for 40 minutes.
